Strawberry Granola Crumble

INGREDIENTS 180g gluten-free flour mix 140g granola  ½ teaspoon baking soda ½ cup coconut oil, melted 120mls maple syrup 60 mls milk 60g flaked almonds 1 teaspoon vanilla extract 225g of Strawberry Jam INSTRUCTIONS Preheat oven 350 degrees F. In a large mixing bowl, combine dry ingredients. In a smaller bowl combine all wet ingredients. Add your wet mixture to the dry mixture and combine well. Set a third of the mixture aside for topping. Press remaining mixture onto the bottom of a prepared (we used parchment paper) baking dish. Bake uncovered for 20 minutes at 160 degrees celcius. Remove from oven and spread fruit jam evenly to coat. (We heated the jam to make it easier to spread) Sprinkle almond flakes on top of jam evenly to coat. Grain Free ‘Granola

Ingredients: 250g coconut flakes/ desiccated coconut 70g pumpkin seeds 150g sunflower seeds 30g linseed 100g chopped macadamia nuts 100g almond nibs/flakes 2 Tsp cinnamon 2 Tsp vanilla 2 Tablespoons coconut oil – melted Method: Put pumpkin seeds and sunflowers seeds in a food processer and blitz for a few seconds. Mix all dry ingredients together in bowl. Pour liquids over it and mix. Bake in cool oven (150oC) for 25 mins, stirring every few minutes to prevent the coconut flakes from burning. This is packed full of wonderful nutrients as well as being gluten free wheat free and dairy free. Just a spoonful sprinkled on top of some creamy greek yogurt, or sprinkle it on top of a green salad with some goats cheese and a drizzle of apple syrup. Oat Jumblies

Oat jumblies were a hit in Maria’s mother’s tea rooms years ago. These crunchy cookies with a hint of spice give that wonderful homely smell as they come out of the oven. Simple to make and wonderful with a cup of tea. Adapted here to a gluten-free recipe so that everyone can enjoy them, oh and with a little granola added in as well ! Ingredients: 110g butter 75g light muscovado sugar 1 dessert spoon of honey 90g self raising gluten-free flour 50g gluten-free rolled oats 90g Maria Lucia Bakes No Added Sugar granola 1 teaspoon mixed spice Method: Preheat oven to 180 degrees.
