The best thing during the summertime is the abundance of deliciously sweet homegrown berries. For me, nothing beats a ripe, juicy strawberry! This is a delightful summer berry tarte that combines these lovely berries with our macadamia and coconut keto granola and refreshing greek style yogurt to create a beautiful dessert. It requires very few ingredients and no baking at all so why not try it out?
Ingredients:
- 300g Macadamia & coconut Keto granola + a little extra for decoration
- 45g coconut oil
- 130g almond butter (or any other nut butter)
- 85g maple syrup ( omit if on a keto or low carb diet)
- 2 Tbsp chia seeds
- 500g greek style Yogurt
- Assorted berries (strawberries, blackberries, raspberries, blueberries)
Method:
• Blitz the granola in a food processor for 1 -2 minutes until quite fine
• Melt the coconut oil, almond butter and maple syrup in a saucepan
• Mix the granola into the wet ingredients
• Fill the mixture into a raised fluted flan tin and leave it to cool, initially at room temperature, then in a fridge for at least two to three hours. Freeze it if you wish to use it sooner than that
• Remove the granola base from the tin. It should be fully solidified but not frozen
• Spread the yogurt evenly onto the base
• Decorate the tarte with the assorted berries and a sprinkle of the granola
